Des structures p\u00e9riodiques microscopiques leurs donnent des propri\u00e9t\u00e9s optiques, chimiques ou m\u00e9caniques particuli\u00e8res. C\u2019est ce que l\u2019on appelle la fonctionnalisation de surface, et c\u2019est ce qu\u2019ont appliqu\u00e9 des scientifiques pour donner de la couleur \u00e0 du chocolat. Qu\u2019est-il possible de faire d\u2019autre ?<\/p>\n\n\n\n<p>C\u2019est l\u2019histoire de trois scientifiques, un sp\u00e9cialiste de l\u2019alimentaire (<a href=\"https:\/\/scholar.google.ch\/citations?user=ICUvFdMAAAAJ&amp;hl=de\">Patrick R\u00fchs<\/a>), un sp\u00e9cialiste des mat\u00e9riaux (<a href=\"https:\/\/mat.ethz.ch\/department\/people\/person-detail.MTk2NDMy.TGlzdC8yNTQzLC0xNjM2MjE2MDE=.html\">Etienne Jeoffroy<\/a>) et un physicien (<a href=\"https:\/\/scholar.google.com\/citations?user=ouAEfRoAAAAJ&amp;hl=en\">Henning Galinski<\/a>). Au d\u00e9tour d\u2019un couloir de l\u2019\u00c9cole polytechnique f\u00e9d\u00e9rale de Zurich o\u00f9 ils travaillent, ils se demandent en prenant un caf\u00e9&nbsp;: mais pourquoi donc le chocolat est-il marron&nbsp;? Est-il possible d\u2019en changer la couleur, sans y ajouter de colorants&nbsp;?<\/p>\n\n\n\n<p>Ce qui est au d\u00e9part un simple sujet de discussion devient rapidement un d\u00e9fi pour les trois scientifiques qui en viennent \u00e0 d\u00e9velopper, avec l\u2019aide d\u2019Anita Zingg, \u00e9tudiante en science des mat\u00e9riaux, un proc\u00e9d\u00e9 permettant de conf\u00e9rer \u00e0 la surface du chocolat&nbsp;<a href=\"https:\/\/ethz.ch\/en\/news-and-events\/eth-news\/news\/2019\/12\/shimmering-chocolate.html\">la propri\u00e9t\u00e9 de changer de couleur suivant l\u2019angle auquel on l\u2019observe.<\/a><\/p>\n\n\n\n        <div class=\"youtube-lazy-container\" data-youtube-id=\"l3ZFZ_ApzGY\" data-youtube-url=\"https:\/\/youtu.be\/l3ZFZ_ApzGY\">\n            <div class=\"youtube-lazy-placeholder\">\n                <img decoding=\"async\" src=\"https:\/\/img.youtube.com\/vi\/l3ZFZ_ApzGY\/maxresdefault.jpg\" alt=\"YouTube Video\" class=\"youtube-lazy-thumbnail\" loading=\"lazy\">\n                <div class=\"youtube-lazy-overlay\">\n                    <div class=\"youtube-lazy-play-button\">\n                        <svg width=\"68\" height=\"48\" viewBox=\"0 0 68 48\">\n                            <path d=\"M66.52,7.74c-0.78-2.93-2.49-5.41-5.42-6.19C55.79,.13,34,0,34,0S12.21,.13,6.9,1.55 C3.97,2.33,2.27,4.81,1.48,7.74C0.06,13.05,0,24,0,24s0.06,10.95,1.48,16.26c0.78,2.93,2.49,5.41,5.42,6.19 C12.21,47.87,34,48,34,48s21.79-0.13,27.1-1.55c2.93-0.78,4.64-3.26,5.42-6.19C67.94,34.95,68,24,68,24S67.94,13.05,66.52,7.74z\" fill=\"#f00\"><\/path>\n                            <path d=\"M 45,24 27,14 27,34\" fill=\"#fff\"><\/path>\n                        <\/svg>\n                    <\/div>\n                <\/div>\n            <\/div>\n        <\/div>\n\n\n<p>Cette histoire me pla\u00eet particuli\u00e8rement pour trois raisons&nbsp;: parce qu\u2019elle t\u00e9moigne de l\u2019esprit de curiosit\u00e9 quasi enfantin qui peut animer certains scientifiques, parce qu\u2019elle donne un bel exemple de coop\u00e9ration interdisciplinaire entre chercheurs, et parce qu\u2019elle pr\u00e9sente une application nouvelle de ce qu\u2019on appelle&nbsp;<a href=\"https:\/\/www.cailabs.com\/application\/fonctionnalisation-de-surface\/\" target=\"_blank\" rel=\"noreferrer noopener\">la fonctionnalisation de surface<\/a>.<\/p>\n\n\n\n<h5 class=\"wp-block-heading\"><strong>La fonctionnalisation de surface<\/strong><\/h5>\n\n\n\n<p>La fonctionnalisation de surface d\u00e9signe le fait de conf\u00e9rer \u00e0 la surface d\u2019un mat\u00e9riau une texture particuli\u00e8re pour en optimiser les propri\u00e9t\u00e9s, voire m\u00eame d\u2019y ajouter de nouvelles propri\u00e9t\u00e9s. Les chercheurs mentionn\u00e9s pr\u00e9c\u00e9demment ont pu donner cette couleur au chocolat en y inscrivant \u00e0 la surface, \u00e0 l\u2019aide d\u2019un moule sp\u00e9cialement con\u00e7u, des structures p\u00e9riodiques microscopiques<sup>(1)<\/sup>&nbsp;telles que celles que l\u2019on voit sur la figure 1. Par exemple&nbsp;:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Absorption de la lumi\u00e8re&nbsp;:<\/strong>&nbsp;Il est possible de faire en sorte qu\u2019un m\u00e9tal ou un semiconducteur, normalement r\u00e9fl\u00e9chissant, se mette \u00e0 absorber la lumi\u00e8re en y inscrivant des structures p\u00e9riodiques telles que celles de la figure 1. Des chercheurs ont notamment r\u00e9ussi \u00e0 faire en sorte que de l\u2019or absorbe presque 100% de la lumi\u00e8re, cr\u00e9ant ainsi litt\u00e9ralement de \u00ab l\u2019or noir \u00bb<sup>(2)<\/sup>. Cette propri\u00e9t\u00e9 est int\u00e9ressante pour des applications telles que la photo-d\u00e9tection ou le photovolta\u00efque.<\/li>\n<\/ul>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Super-hydrophobie&nbsp;:<\/strong>&nbsp;Il est possible de rendre une surface hydrophobe, c\u2019est-\u00e0-dire qui emp\u00eache l\u2019eau d\u2019y adh\u00e9rer, en y imprimant une texture proche de celle que l\u2019on retrouve sur les feuilles de Lotus. Cela conf\u00e8re aussi \u00e0 la surface la capacit\u00e9 d\u2019\u00eatre autonettoyante, car les gouttes d\u2019eau coulant sur cette surface emportent la poussi\u00e8re et autres impuret\u00e9s, ce qui peut \u00eatre utile pour la conception de panneaux solaires autonettoyants<sup>(2)<\/sup>.<br><\/li>\n\n\n\n<li><strong>Super-hydrophilie&nbsp;:<\/strong>&nbsp;\u00e0 l\u2019inverse, il est possible de rendre une surface hydrophile, c\u2019est-\u00e0-dire attirant l\u2019eau. Des chercheurs ont ainsi pu cr\u00e9er une surface inclin\u00e9e qui permet \u00e0 une goutte d\u2019eau de remonter la pente par effet de capillarit\u00e9. Cette propri\u00e9t\u00e9 trouve des applications int\u00e9ressantes pour le domaine m\u00e9dical ou la micro fluidique<sup>(2)<\/sup>.<br><\/li>\n\n\n\n<li><strong>Biocompatibilit\u00e9&nbsp;:<\/strong>&nbsp;La surface d\u2019un alliage m\u00e9tallique ou d\u2019un mat\u00e9riau c\u00e9ramique peut \u00eatre alt\u00e9r\u00e9e pour y favoriser l\u2019adh\u00e9sion de cellules biologiques et leur croissance. Le principe est d\u2019irradier une surface avec un laser \u00e0 impulsion ultra-courte, g\u00e9n\u00e9ralement dans le domaine femtoseconde.<\/p>\n\n\n\n<p>Suivant les param\u00e8tres lasers (dur\u00e9e d\u2019impulsion, \u00e9nergie du laser, longueur d\u2019onde, polarisation\u2026), il est possible de reconfigurer pr\u00e9cis\u00e9ment la surface irradi\u00e9e et ainsi obtenir une grande vari\u00e9t\u00e9 de fonctionnalisations de surface diff\u00e9rentes<sup>(3)<\/sup>. De plus, la texturation de surface par laser \u00e9vite l\u2019utilisation de proc\u00e9d\u00e9s chimiques ou m\u00e9caniques g\u00e9n\u00e9ralement tr\u00e8s polluants.<\/p>\n\n\n\n<p>Pour d\u00e9mocratiser l\u2019utilisation industrielle de la fonctionnalisation de surface, il est cependant imp\u00e9ratif d\u2019augmenter la vitesse d\u2019usinage et ainsi baisser les co\u00fbts de production. Cailabs, leader de la mise en forme laser pour la t\u00e9l\u00e9communication, la d\u00e9tection et l\u2019usinage laser, a particip\u00e9 en 2019 \u00e0 un projet avec le centre Alphanov pour
